Park City, Utah

Every once in a while it's fun to break away from the usual routine
even if
the mundane work and meetings of the week continue on . . .

Kind of like a mini stay - cation
in a condo just 50 miles from home.

This was one of those times . . .

A week in a timeshare condo in Park City!

Close enough to commute for all the usual activities . . .

Sunday meetings, work, school and classes

But far enough away to feel like you're on vacation.

Seeing a large herd of Elk grazing off the highway
Ice cream!
Amazing beds!
Watching the guys trying to beat Norm at pool
(he still is the reigning champ!)

Oh - I do so LOVE this family!

So Easily Entertained . . .

I must confess that we are smitten . . .

Truly we are!

We sit around evenings (that is on those FEW evenings that we are all actually present and CAN sit around) and watch Karianne's tummy move.

Karianne's husband started this phenomenon.

He knows just exactly what to do to make the tummy poke back, shift from side to side,
and stretch her tiny (oh yes! it's a girl!) little feet and elbows out sideways!

We're so easily entertained these days.

And did I mention that we're on the final countdown?

Baby is due in 39 days!

And since my life is passing before my eyes at rocket -blast-off speed, I know it will be here before I know it  - :D  (exceptionally big grin!)

Ah perfection . . .

in at least one aspect of life . . .


We have a tradition at our home that

(it's our only one . . .)

Chocolate Dipped Strawberries




Yep, I think we have it down . . .

This is what we use -

There are a few tricks that would be nice to know -


  • Melt the chocolate in a narrow container (like a pyrex 1 cup measuring cup) placed in a sauce pan with about 1-1 1/2 inches of water in the pan, over medium low temperature, stirring until smooth.
  • Be careful not to get any water (NOT a single drop) into the chocolate!
  • Thin the white chocolate with a few teaspoons of oil to a consistency for dipping
  • The strawberries need to be very fresh and DRY!
  • After dipping the first layer, refrigerate until chocolate is set before dipping the second layer.
  • To do easy swirls for decoration - pour a small amount of chocolate into a SNACK size zipper bag, cut the tiniest of tiny corners off the bag with scissors and squeeze swirls onto the strawberries with the melted chocolate.
Then you just eat them!

Watch out for that strawberry juice - it's dripping down your chin  :D
